Possibly my favourite cake

Ok, looking at this blog, you may not believe that I never thought I'd be much of a baker. I'd baked brownies once from scratch and it did not turn out well. And since then, I was a White Wings / Betty Crocker expert but not much else. The way I cook is very instinctive and relies on the smell and look of food (I'm also not very good at remembering to taste food - also I find this hard to do as I know what the finished product is meant to taste like but not the various steps in the middle). Baking, though, is so precise - almost like a chemistry experiment more than my yolo-style of cooking. But during these last 2 years, I've really discovered how calming it can be to bake. There's less thinking to do because you follow a recipe as it's given.


The next challenge is I'm not much of a sweet tooth. I don't tend to crave cakes and things much... don't get me wrong - I love brownies and chocolate chip cookies so if they're there, I definitely want them. But making it myself - not something I would generally do. This cake though I really wanted to make. My friend brought over her orange chiffon cake for dinner a few weeks ago. And it was light, beautifully citrus-y, and best of all for me - not too sweet and did not have any buttercream / icing.


She mentioned she knew the cake would come out well because the oranges smelt so good when she was using them (it was Spring after all!) and so I really wanted to make it. I decided to make it for my sister's birthday as a nice light, seasonal cake.





It is so light though that I made it again a week later for when my husband's family came to visit.


I've always been a chocolate girl - but this cake has beaten every chocolate cake I've had into the no.1 spot I think!
